Zesty Chickpea and Pumpkin Seed Snack
- Chickpeas (1/2 cup, drained and rinsed)
- Pumpkin seeds (2 tablespoons, raw or lightly toasted)
- Lemon juice (1 tablespoon)
- Olive oil (1 teaspoon)
- Salt and pepper (to taste)
- Optional: Fresh herbs like cilantro or parsley, chopped, for added freshness.
Prepare Chickpeas: Drain and rinse the chickpeas thoroughly. Pat them dry with a paper towel to remove excess moisture.
Toast Pumpkin Seeds (optional): If using raw pumpkin seeds, you can toast them in a dry skillet over medium heat for a few minutes until they start to pop and become fragrant. Remove from heat and let them cool.
